Airag, Mongolia

Mongolia without airag would be like America without Budweiser. Both are mild, slightly acidic alcoholic beverages—but airag is made from fermented mare’s milk. During production, lactobacilli bacteria acidify the milk, and yeasts turn it into a carbonated and moderately alcoholic drink. To get the right consistency, the mix is stirred no less than one thousand times every day. The final product is around 18 proof—stronger than beer but weaker than wine.

Black Pudding, England

Black pudding isn’t pudding at all, but a type of sausage made by combining blood with a filler and cooking until it will congeal when cooled. Fillers run the gamut from meat and fat to oatmeal and bread. Traditional British breakfasters indulge their vampiric tendencies with a few slices alongside baked beans, tomatoes, mushrooms, and eggs. They call it a fry-up—and while it’s guaranteed to inflate your cholesterol levels, it does cover many nutritional bases.

Boshintang, North and South Korea

Like it or not, in some places man’s best friend is man’s best-tasting friend. On the Korean peninsula, the most common dish involving dog meat is boshintang—a soup featuring meat from the noranke (“yellow dog”), which are raised specifically for human consumption. The meat is boiled with green onion, dropwort, perilla leaves, and perilla seed powder. Despite pressure from international animal rights groups, it’s still reportedly served at more than 6,000 restaurants in South Korea. Figures aren’t available for the north.

Capybara, Brazil

While cooks in Peru and Ecuador are busy serving guinea pig—the meekest of all rodents, known locally as cuy—some Brazilians grill up their larger, meaner cousins, known locally as capivaras. Adult capybaras can grow to four feet in length and weigh 140 pounds. The meat is usually marinated with crushed garlic, onions, pepper, bay leaf, and vinegar for five hours, and served up as a sort of casserole. Capybara was more popular centuries ago, in part because of the Catholic Church’s directive to skip meat on Friday. When European missionaries first encountered the capybara, they classified it as a fish.

Kenke, Ghana

It may sound innocent enough—fermented, partially cooked cornmeal—but kenke is one of the planet’s most pungent foods. Ground corn is soaked in water, then allowed to ferment for three days. The kernels are then partially cooked, wrapped in banana leaves, and steamed until they reach the consistency of warm, mushy polenta. Kenke is usually served with a stew of crushed tomatoes and pepper.

Lutefisk, Norway

This traditional Norwegian dish is made from air-dried or salted whitefish and lye, the corrosive alkaline used in oven cleaners and drain openers. The trick to making a decent lutefisk is to incubate the fish in the lye solution for just the right amount of time that the fish fats don’t turn into soap. It’s ready when it has a jelly-like consistency—and smells awful. In 2008, more than 3,000 tons of lutefisk were snatched from Norwegian shelves.

Muktuk, Greenland

Since roughly the last ice age, Greenland’s Inuits have been harpooning 3,500-pound whales from kayaks in the open ocean. During the brief summer they also hunt narwhals (the so-called “unicorns of the sea,” thanks to their long spiraled tusks). The dish made from the blubber and raw skin is called muktuk—and it’s considered a delicacy. The textured layers consist of the rubbery, hazelnut-flavored skin, the chewy white fat, and in between the two a thin, corklike protective layer (the hardest part to bite through).

Considering the popularity of caviar—not just in Japan, but worldwide—it’s not outlandish to imagine eating the male counterpart to fish roe. That is, milt—the sperm-filled reproductive glands of male fish (usually cod, anglerfish, or puffer fish). In Japan, it’s called shirako, which translates to “white children.” At best, when cooked, shirako has a creamy, custardesque texture. At worst, it’s an unctuous gooey blob served raw—and eaten proudly by only the most, er, seminal of Japanese diners.

In a sly inversion of the old adage “The brain is a terrible thing to waste,” Mexicans are proud to serve up tacos de sesos. That’s cow brains—and, strictly speaking, they’re not unhealthy. But gray matter is very high in cholesterol—and according to the medical textbooks, bovine spongiform encephalopathy (a.k.a. mad cow disease) has an incubation period of up to 50 years. A Norse Sun god

In Norse mythology, Freyr was the ruler of peace, fertility, rain and sunshine. He was a pretty powerful dude. Legend says that Freyr rode a boar named Gullinbursti, which could travel across the sky and the ocean. And if he got bored, he could bust out his own ship, the Skiobloanir, which was the finest of ships in Scandinavia. When the ship wasn’t in use, Freyr would fold it up and store it in his pocket.

Apollo

In legend, the ancient Greek deity Apollo, the son of Zeus, master of Olympus, rode a chariot pulled by fiery horses across the sky every day to bring light to the world. Venerated in various guises and incarnations throughout classical antiquity, radiant Apollo came to represent not only the sun, but also other illuminating fields of music, logic and reason. In The Birth of Tragedy, Friedrich Nietzsche, the 19th century German philosopher, described what he termed the Apollonian tendency as a kind of ordering impulse, bringing discipline and structure to the irrational, feral impulses that underlie all human expression. That’s quite a task, even for the guy who rides a flying chariot every day.

Egypt’s Ra

Worship of the ancient sun god Ra, a.k.a. Re, wasn’t limited to Heliopolis in Egypt: he lent his name to Egyptian kings, who took the title Son of Ra. Fittingly, given the sun’s role in enabling life, he was also a creator god. His preferred method of transportation was a ship rather than a chariot, and, so the story goes, he used it not just in the sky but also in the underworld at night. He was believed to be reborn each day.

Huitzilopochtli, Aztec god of Sun and War

Huitzilopochtli’s name is a combination of two Nahuatl (or Aztecan) words, huitzilin, meaning hummingbird, and opochtli, which means left — the god’s name translates literally as “Hummingbird on the Left.” This resulted in Huitzilopochtli often being depicted as a blue- or green-colored hummingbird or as a warrior whose armor and helmet were made of hummingbird features. But Aztecs also believed dead warriors were reincarnated as hummingbirds and they called the south the left side of the world. So, translated another way, Huitzilopochtli’s name means “Resuscitated Warrior of the South.” The Aztecs believed their sun god, who was said to be in constant struggle with darkness, required blood from a human heart as nourishment to ensure his survival. To feed their god, the people of the sun offered up their own in the form of human sacrifice.

Lisa and Mawu

The Fon people of Benin and the Ewe people — who are dispersed throughout Ghana, Benin and Togo — count Lisa (the sun deity) and Mawu (the moon deity) as twins in one spirit. The two together are regarded as the creators of the universe, with Mawu representing motherhood and fertility while Lisa is seen as the embodiment of heat, work and strength.

Like many other pre-Christian deities, the Celtic sun god Lugus, or Lugh in Ireland, is remembered in some legends as a quasi-historical figure, a shimmering, brilliant warrior king who helped a tribe of ancient Irish win a war against a race of giants. Leading the giants, known as the Formorians, was Balor, an evil god of the underworld who happened to be Lugus’ grandfather. Balor’s great power emanated from a magical Cyclops-like eye, but in battle Lugus managed to sling a stone into Balor’s socket, pushing the eye out of the back of his head so it wreaked havoc upon the army of giants arrayed behind Balor. A multifaceted deity, Lugus was tied to fertility rites, skills of invention and harvest cycles. The story of his victory over Balor is similar to a host of other mythological tales in the Indo-European tradition, in which a young, plucky usurper and his allies supplant the old rulers of land, who were often denizens of some dark underworld realm.

Surya, the Hindu Sun god

According to ancient Hindu mythology, Surya, as the sun god, represents the visible form of the divine, one that you can plainly see every day. Depicted as a red man with three eyes and four arms, the deity is commonly pulled around in a chariot, carried by either seven horses or one horse with seven heads. Surya is also believed to heal the sick, and as such is honored with temples and festivals throughout India. The sun god is also believed to bring good fortune — an attribute that prompts many shopkeepers to place the symbol of the sun over the doors of their shops.

The 10 Suns

Once upon a time there were 10 suns in the sky, according to Chinese mythology. They would travel individually with their mother, goddess Xihe, until one day they decided to appear in the sky at the same time. The heat from the combined suns, however, was so immense that the father of the suns, Dijun, ordered each of them to behave. But they did not heed his warnings. So Dijun sent the archer Yi to shoot the suns away, killing nine of them and leaving only one.

The Inuit, a group of indigenous people who live in Alaska, Greenland and the Arctic, explain the existence of the sun and the moon with the legend of the moon god Anningan and his sister, the sun goddess Malina. The story goes that the two once resided together and, as siblings are wont to do, got into a quarrel one day. Malina stormed off. Anningan followed. Tales differ on the cause of the spat and whether or not Anningan was following to apologize or to argue some more. But because he is in constant pursuit, he neglects to eat and gets thinner and thinner, which explains the waning phase of the moon. When the moon disappears, the Inuit believe that Anningan has gone away to eat. Then, during the moon’s waxing period, he starts his search anew. When he finally is able to catch up to Malina, it causes a solar eclipse.

The people of Jingdezhen City, China have found an original way to celebrate the Chinese Year of the Rabbit – they’ve built a giant statue of a rabbit from 30,000 porcelain plates.

Ever since the Song dynasty, 1,700 years ago, Jingdezhen has been known as the “porcelain city” because of its porcelain-making history, so it made perfect sense the locals used centuries-old skills for the celebration. Just like that porcelain dragon from Yangzhou that I posted about last week, this giant rabbit sculpture features a metal frame covered with thousands of porcelain plates.

Ark Hotel – World’s New Most Unique Hotel

The Ark project was designed by Russian firm Remistudio with the assistance of the International Union of Architects’ program Architecture for Disasters Relief. The dome-shaped hotel is constructed with wooden arches, steel cables and a “self-cleaning” plastic layer instead of glass. The slinky-like Ark hotel can be adapted to suit both land and water. It is built to stay afloat in the event of floods or rising seas. The 14,000 square metre shell-like construction of arches and cables distributes the weight evenly, meaning it can withstand earthquakes. Daylight is filtered through to internal rooms due to the hotel’s see-through structure, reducing the need for lighting.

Designed as: “an integrated energy system with an uninterruptible power supply using alternative energy sources”, the hotel uses solar panels and a rainwater collection system to provide inhabitants with power and water. It would be built around a central pillar connecting to roof-top wind generators and heat pumps, as well as to energy storage and thermal conversion units below.There will also be a “tornado” energy generating spiral at the top of the pillar.
